The thing I wanted to mention was that I moved from Seattle to Loveland, Colorado north of Denver in July ’05. I brought my ’01 Dodge Ram 2500 with a 8.5′ Northland Grizzly slide-in camper. ​In order to excel you are going to need to read up on jig building so that you can produce consistent repeatable cuts.  Ideas for jigs are a dime a dozen online and you could easily lose a couple of hours browsing the hundreds of ideas people think up.  A more economical approach would be to build your jigs as your projects demand them.  After you go through that exercise 4-5 times, you'll find you've accumulated quite the collection of jigs without even trying.

I think Rockler has several ready to assemble benches that look quite good. Example: Large Workbench (N2000) Item #: 31719... I. too, am retired and trying to decide whether to buy or build. I have a bench that looks good and works good, but just is too light for hand work. It all depends on what you expect to be using the bench for. There are some good books out there to help us decide. "The Workbench" by Lon Schleining" is excellent. Also, Christopher Schwarz has written several good books on the subject. Vince, good luck and have fun working wood.
It’s also a good idea to cover up any exposed insulation or open stud bays so that you have a flat surface to mount stuff on the walls of your workshop. Here we’re attaching plywood panels to the metal framing but in most garages or sheds you can just nail them directly to the studs. Low-tech tools are high on value A basic set of handplanes lets you true edges, flatten panels or wide boards, and achieve finish-ready surfaces. Start with a small cluster of handplanes—low-angle and standard block planes, a No. 4 or 4-1/2 bench plane, and a jointer plane. A set of inexpensive chisels is essential for chopping, paring, and trimming.
Hey Kasey, I don’t do anything for insulation, I treat truck camping just as I would cold weather tent camping. Just bring a good sleeping bag and learn how to manage in the cold. Usually the side wall of the truck is not at a perfect 90 degree angle, so you will need to check out the angle and compensate. You can hold up a small piece of 2×4 at the back to judge the angle and make a few test cuts to ensure it sits “flat” aka level.

The refrigeration setup in your van is an area where you really do get what you pay for, whether you’re paying in money or in time. The best options are the most expensive. The cheapest options are a pain and/or don’t work very well. And if you try to save money with a DIY refrigerator setup, you could end up spending a lot of time on installation.
